Spinach and Artichokes
2 tbsp. butter
1 garlic clove, minced
6 canned artichoke hearts, drained and diced
3 oz. frozen spinach, thawed, drained, and squeezed dry
Fondue
3/4 cup dry white wine
3/4 cup water
2 tsp. lemon juice
1 tbsp. cornstarch
1 tsp. ground black pepper
12 oz. cubed Monterrey Jack cheese
3 oz. grated Parmesan cheese
4 oz. crumbled feta cheese
Heat butter over medium heat in a saute pan. Add garlic, artichokes, and spinach for two minutes and set aside. Place all fondue ingredients into jar. Blend on “High” for 4 to 4 1/2 minutes (3 “Soups” cycles with a Blendtec). Pour into fondue pot and stir in spinach and artichoke mixture.
