This is one of several recipes I will be posting from the Vitamix “Endless Possibilities” electronic recipe guide.  This one works well on everything from sushi to spring rolls!  After following the initial recipe, adjustments can always be made with any of the ingredients, depending on taste preferences.  Will keep in the refrigerator for up to 3 days.

1 cup diced mango
Juice of 1 lemon
3 tbsp. agave nectar
3 tbsp. evaporated cane juice (may substitute extra agave nectar or honey)
2 tbsp. minced red onion
1 red jalapeño pepper (more may be added depending on spice tolerance)
1/2-inch piece fresh ginger
1 clove garlic
1/4 tsp. hot sauce, or, cayenne pepper to taste
1/4 tsp. salt

Place all ingredients in blender and run on high speed for 45 seconds.  If necessary, scrape sides with spatula, relocating ingredients into cutting path of blade.  Continue blending.
