This is an extremely popular smoothie recipe of Robyn Openshaw’s – better known as the Green Smoothie Girl. Robyn is a huge advocate of green smoothies and a predominantly raw, plant-based diet. You can watch her make this very recipe here.
1 1/2 cups coconut water (fresh or canned/boxed)
2 tsp. vanilla extract
1 large carrot, halved
1/2 medium raw beet, peeled
1/4 cup cashews
1/4 cup chopped dates (or 4 – 5 large, pitted dates)
1 tbsp. protein powder (optional)
12 frozen strawberries
Place all ingredients in blender and run on High speed for 50 seconds (“Whole Juice” cycle with a Blendtec). Additional blending time is fine if strawberries aren’t completely incorporated into the smoothie.
Love this smoothie! I usually just use regular water instead of coconut and an extra tbsp of protein powder to make up for it. It is fabulous! One of my favorites!
Hi, I have been making smoothies from fresh fruits and Veggies for decades now and this smoothie is absolutely one of the best tasting smoothies I have ever made; I did add a cup of kale to mine!
The energy it gives me to start my day is amazing and I am Soooooooo in love.
Thank you for sharing.
