This non-alcoholic version of the Piña Colada is based off of Elana Amsterdam’s recipe on elanaspantry.com.  Elana’s website is tailored toward gluten-free diets.

2 large cucumbers, peeled and chopped into chunks
1/2 cup water
1 cup parsley
1 1/2 cup frozen pineapple chunks
2 tbsp. coconut oil
2 tbsp. agave nectar
8 – 10 ice cubes

Place cucumber and water into blender and blend on high setting until liquid.  Add remaining ingredients and blend on medium-high setting (“Whole Juice” setting on a Blendtec) until smooth.
