This is a very simple recipe yet also an extremely healthy alternative to dairy.  There is plenty of information on the web regarding how to harvest the meat from a mature coconut – don’t be intimidated.  Refrigerated, should keep for 4 or 5 days.

Meat from 1 mature coconut (save and use the water, if possible)
4 cups cold water
2 tbsp. agave nectar (optional)
1 tsp. vanilla extract (optional)

Blend on high for 3 to 4 minutes (if using a Blendtec, run “Soups” cycle twice).  Allow mixture to rest for 5 minutes.  Strain well through nut-milk bag or cheesecloth.  Chill for at least 3 to 4 hours.

      Patrick, it’s completely normal. Even canned coconut milk will separate. If you ever make more than you need at one time, just store it in the fridge and give it a stir or quick blend before using the next time.
