This recipe comes courtesy of Lisa Lewis of Smyrna, Georgia. For a gluten-free version, make your own rice flour.
1 cup cottage cheese
1/2 cup flour
3 tbsp. milled flax seed
1 tsp. vanilla extract
2 tbsp. agave nectar
Blend until smooth (“Batters” button if using the Blendtec).
Optional: add pecans, walnuts, blueberries, or diced apples lightly coated with all-spice. Pulse briefly in blender if adding additional ingredients.
Grill on skillet or hotplate with light oil (Lisa recommends organic coconut oil) until golden brown on both sides.
