Coconut Milk

This is a very simple recipe yet also an extremely healthy alternative to dairy.  There is plenty of information on the web regarding how to harvest the meat from a mature coconut – don’t be intimidated.  Refrigerated, should keep for 4 or 5 days.

Meat from 1 mature coconut (save and use the water, if possible)
4 cups cold water
2 tbsp. agave nectar (optional)
1 tsp. vanilla extract (optional)

Blend on high for 3 to 4 minutes (if using a Blendtec, run “Soups” cycle twice).  Allow mixture to rest for 5 minutes.  Strain well through nut-milk bag or cheesecloth.  Chill for at least 3 to 4 hours.

  1. I often make almond milk, think I should give this one a go. Think it would be wonderful in a fruit smoothie. Thanks 😉

  2. My coconut milk separated, is this normal? Just bought a Vitamix, love you’re site, thanx Pat

Patrick, it’s completely normal. Even canned coconut milk will separate. If you ever make more than you need at one time, just store it in the fridge and give it a stir or quick blend before using the next time.
