Cherry Breakfast Cobbler

Another recipe from the Vitamix “Valentine’s Day Recipes” electronic brochure I modified to be a little more “heart healthy.”

1 1/2 cups whole grain oats (uncooked)
1/2 cup whole wheat flour
1 tsp. baking powder
1/2 tsp. ground cinnamon
1/2 tsp. salt
3/4 cup brown sugar
1/4 cup coconut oil (may also use butter or butter/oil combination)
2 eggs
1 1/2 cups low-fat milk
1 cup frozen cherries (sweet or tart)

Preheat oven to 350°.  Mix the first 5 ingredients in a bowl.  Place brown sugar, oil, eggs, and milk into blender and blend on high speed for 30 seconds.  Pour mixture into bowl with dry ingredients and stir well.  Fold in cherries.  Pour into 9″ x 9″ baking pan lined with cooking spray.  Bake for 25 to 30 minutes.  Let cool before serving.
