This is another Blendtec “Recipe of the Week” that I modified slightly.  Nutritional yeast is high in protein and is often used as a cheese substitute.  Great over pasta.

2 tbsp. water
2 tbsp. extra virgin olive oil
Juice from 1/2 large lemon
1 clove garlic
1 medium ripe avocado, peeled and pitted
1/2 cup fresh basil
2 tsp. nutritional yeast or 2 tbsp. grated fresh Parmigiano-Reggiano cheese
Salt and pepper to taste

Place all ingredients into blender and run on medium for 20 – 30 seconds (“Sauces/Dips/Dressings/Batters” button with a Blendtec).  Use a spatula and/or tamper to help get ingredients into blades, if necessary.
